Nioka Steakhouse

Nioka Steakhouse brings its farm-to-table approach to Honeysuckle, Newcastle, with a focus on locally sourced Black Angus beef and regional ingredients. The beef comes from the Hope family’s 1,300-acre Nioka Farm, where cattle are grass-fed before a 120-day grain-finishing program that incorporates spent grain from the family’s brewery and distillery production.

The restaurant’s signature beef is shaped by careful handling at every stage. Select prime cuts are dry-aged in a custom facility, while the kitchen follows a whole-animal approach designed to make use of the full carcase rather than focusing only on premium steaks. The venue also highlights lesser-known beef cuts, reflecting its interest in artisan butchery and maximising flavour across the animal.

Nioka’s menu includes à la carte dining for groups of up to 10 guests, alongside a drinks list featuring premium wines, cocktails, local spirits and rare whiskeys. Its story began in 2019, when Jonno Hope expanded the Hope family business into cattle farming, initially using spent brewery grain.
