IronBark Hill Brewing Co brings a dedicated craft beer stop to Pokolbin’s wine-country circuit, with beer brewed and served on the Peter Drayton estate. The range covers clean Lagers, Pale Ales, IPAs, Stouts and seasonal releases, all made on-site and available fresh from the taproom or in cans to take home. The Far Canal Lager is the brewery’s recognised signature, while Hop Circus IPA and Hazy Train Hazy Pale offer more hop-forward options. Seasonal beers and collaborations with the estate’s distillery add variety for return visits.

The taproom sits inside the working winery, among the wine tanks, with a custom-built brewing system and brewers operating on site. Visitors can try a paddle of four 200mL tasters, or choose a middy or schooner in the outdoor pavilion overlooking the vines. That setting makes it a natural choice for a relaxed stop while exploring the Hunter Valley, particularly for people who want something beyond the region’s usual cellar-door experience. Walk-ins are welcome during the listed visiting hours, with bookings available for those planning ahead.

The brewery’s story is closely tied to the family-owned Peter Drayton estate. Its first beers were brewed in 2016 and the Brewhouse opened to the public the following year. IronBark Hill says it uses single-origin malts from regional NSW, along with preservative-free hops and adjuncts, and its beers have received Gold and Silver medals at state and national level. The wider estate brings wine, beer and spirits together, so it works well as part of a broader Pokolbin visit rather than as a standalone beer stop only.

There is also food on the estate through Wildstreak Kitchen, including share plates and platters from Wednesday to Sunday and wood-fired pizzas from Friday to Sunday. Beer can be paired with food, wine or spirits in the outdoor pavilion, which gives couples, small groups and solo visitors flexible ways to settle in. With a range of tasting formats, take-home cans and an outlook over the vines, IronBark Hill suits both a quick tasting and a longer Hunter Valley lunch stop.
