The brewery’s story is closely tied to the family-owned Peter Drayton estate. Its first beers were brewed in 2016 and the Brewhouse opened to the public the following year. IronBark Hill says it uses single-origin malts from regional NSW, along with preservative-free hops and adjuncts, and its beers have received Gold and Silver medals at state and national level. The wider estate brings wine, beer and spirits together, so it works well as part of a broader Pokolbin visit rather than as a standalone beer stop only.

There is also food on the estate through Wildstreak Kitchen, including share plates and platters from Wednesday to Sunday and wood-fired pizzas from Friday to Sunday. Beer can be paired with food, wine or spirits in the outdoor pavilion, which gives couples, small groups and solo visitors flexible ways to settle in.
